Stuffed Mushroom

Mushroom Mushroom Mushroom - You little fleshy fungi !!

On some dreamy days, I wonder what it would be like to be a gnome and live in a mushroom house - a colourful mushroom house ! Varied coloured mushrooms, in all sizes and shapes, solid coloured ones and the spotted ones - boy! wouldn't that be a pretty picture. 

Of course, then I wouldn't be able to take a bite of those 'yummy' looking mushrooms, which are better known as toadstools and are poisonous. And, that's when the salivating dreamy me, finally descends down to earth from dreamland :D . 

It was after one such dreamy session that my taste buds made me stir up the below crispy stuffed mushrooms.


Stuffed Mushroom

 INGREDIENTS
  • 8 - 10 Mushrooms 
  • 1 Medium Onion, finely chopped
  • 2-3 Garlic Cloves, finely minced
  • 1 Green Chilly or as per taste 
  • 1/4 Cup Capsicum, finely chopped
  • 1/2 Tspn Pepper
  • 1-2 Tbspn Cheddar Cheese
  • 2 Tbspn Maida
  • 2-3 Tbspn Bread Crumbs 
  • Tooth Picks
  • Oil
  • Salt
METHOD
  • Remove stalk from the mushrooms. With the help of a small dessert spoon, scrape out the insides of the mushroom. Take care not to break the mushroom caps.
  • Chop the stalks finely.
  • Heat about 1 tbspn oil in a pan. Add the chopped onion, garlic, capsicum and the stalks. Add salt and pepper. Saute till it becomes dry. Switch off flame. Add chopped coriander and shredded cheddar. Mix well.
  • Make a thick batter of maida, water and salt.
  • Fill each mushroom cap with the stuffing. With a toothpick, attach two stuffed mushrooms facing each other (stuffed side facing each other).
  • Dip them in the batter. Coat well. Roll in breadcrumbs till well coated.
  • Deep fry in oil till golden brown.
  • Serve hot with tomato ketchup or green chutney.

Chop veggies finely (including mushroom stalk).

Saute till moisture content evaporates completely.

Add shredded cheese and coriander leaves. Mix well.

Fill each mushroom with the stuffing.

Attach 2 mushroom caps with the help of a tooth pick or skewer.

Dip in batter made of maida, water and salt.

Roll in breadcrumbs till well coated.

Deep fry till golden brown.
Take a bite, relish and join me in dream land with the gnomes :P .


Tips :
Saute the stuffing mix well till it is completely dry as later stages include deep frying too. Retained moisture may lead to the hot oil making funny sounds along with actions (animated hot oil :D) .
