
INGREDIENTS
- 1 Cup Chopped Lauki
- 1 Medium Potato
- 1 Medium Onion, chopped finely
- 2 Tspn Ginger Garlic Paste
- 1 Medium Tomato, pureed
- 1 Tspn Cumin Seeds
- 1 Green Chilly or as per taste, chopped finely
- 1 Tspn Garam Masala
- 1 Tspn Turmeric Powder
- 1 Tspn Kasuri Methi
- Salt, as per taste
- Peel and chop the lauki into cubes. Cut the potatoes into similar sized cubes too.
- Heat about a couple of tbspn of oil (preferably mustard oil), add cumin seeds and as they splutter add finely chopped onions. Saute till translucent.
- Add ginger garlic paste and fry till raw smell disappears. Add pureed tomato, chopped green chilly, salt and turmeric. Fry till oil starts oozing from the masala.
- Add the chopped veggies and saute for a couple of minutes. Add about a cup of water. Pressure cook this for around 2 whistles or till the veggies are soft and well cooked.
- After the steam escapes, open the lid and add garam masala and kasuri methi. Simmer for about a couple of minutes. Add water if dry. Simmer till required consistency is achieved.
- Garnish with finely chopped coriander leaves and a healthy bowl of lauki curry will be ready to serve.
