Lauki Soup / BottleGourd Soup

Been quite a while since I have been pestering a dear dear friend of mine, to try 'the lauki'. But to no avail yet. She says its bland and tasteless, to which my persistent reply has always been a big fat 'impossible, try it my way'.
And, now that the fitness bug has finally caught up to her, I hope she does give this little creature a try. I am positive, she, like all the others will not be disappointed.

Being composed of 90% water, lauki is not only easily digestible but also supports the urinary system. And, is quite popular amongst weight watchers as well as heart patients.
Moreover, it prevents premature greying of hair which is affecting so many youngsters nowadays.
With so many health benefits, one should definitely try to include lauki in their diets, as much as possible. In fact, even Ayurveda highly recommends it too.

Lauki Soup is one of the simpler recipes for Lauki. One could also try the Lauki Kofta  or the ever famous Lauki Halwa .

BottleGourd Soup


INGREDIENTS
  • 1 Cup Lauki/ Bottle Gourd, cubed
  • 1 Medium Tomato
  • 1 Medium Onion
  • 1 Tspn Pepper, ground
  • 1/2 Tspn Oregano Seasoning (optional)
  • 1 Sprig Basil Leaves (optional)
  • Butter
  • Salt, as per taste
 METHOD
  • Peel the lauki. Chop it into cubes.
  • Pressure cook the cubed lauki, whole tomato and cubed onion, with about a cup of water and salt. The veggies should be soft and well-cooked.
  • Let it cool. 
  • Strain the lauki, tomato and onion and blend in to a fine paste. Do not discard the water.
  • Melt butter in a pan, add the freshly ground pepper. Saute for about half a minute. 
  • Add the blend veggies along with the water. Stir well and let it come to a boil.
  • Simmer for about 5 minutes. Add water as per consistency requirement. Add chopped basil leaves.
  • And, healthy and yummy lauki is all set to be sipped !!

Blend the pressure cooked lauki, tomato and onion to a smooth paste.

Heat butter in a pan and add freshly ground pepper. Saute.

Add the veggie blend with water. Bring to a boil. Add oregano and basil.

Tip:
Peel off the skin of the tomato (after pressure cooked and before blending) to get a fiber free soup.
