Chuin (Drumstick)Aloo Baigan Tarkari

INGREDIENTS:
 

For the Masala:
  • 1 Tspn Mustard
  • 1 Tspn Jeera
  • 1 Medium Tomato
  • 5-6 Cloves of Garlic
  • 1” Ginger piece

  • 2 Drumsticks (Chuin)
  • 1 Medium Potato
  • 1 Medium Brinjal
  • 1 Ambula
  • 6-7 Fried Badi
METHOD:
  • Blend the masala ingredients to a semi smooth paste.
  • In a pan, add 2 cups water, ambula and the masala. Bring to a boil.
  • Add sliced potatoes. And simmer.
  • After the potatoes are half cooked ,add the sliced brinjal and chuin.
  • Keep checking occasionally so as not to over cook the chuin .
  • In another container, heat oil. Add oil, dry red chilli and panchphootan. As soon as the panchphootan stops crackling, add the contents of the other pot and bring to boil.
  • Add fried badi.
  • Serve hot !!
