INGREDIENTS
- 1.5 Cups Poha, medium thicknessi
- 1 Medium Onion, chopped finely
- 1 Medium Potato, chopped into small cubes, about 1cm x 1cm
- 1-2 Green Chillies, chopped finely
- 1 Tbspn Roasted Peanuts
- 1-2 Sprigs of Curry Leaf
- 1 Tspn Mustard Seeds
- 1 Tspn Cumin Seeds
- Pinch of Asfoetida/Hing
- 1 Tspn Turmeric Powder
- Salt, as per taste
- A slice of lemon
- Rinse the poha in plain water till soft. Drain out the water. Keep aside.
- Heat a pan. Add oil. Add mustard seeds When they crackle, add cumin seeds and hing. Then add the chopped green chillies and curry leaves. Saute for a minute.
- Add sliced onions, potato, salt and turmeric. Stir and cover with a lid. Stir occassionally till potatoes are cooked. Then add the roasted peanuts and poha. Mix well.
- Cover with a lid and let it steam for a couple of minutes. Stir occassionally.
- Switch off flame. Before serving, squeeze 1 tspn lemon juice and sprinkle some coriander leaves. Finely chopped tomatoes can also be added as a garnish.
- And, a sumptuous breakfast awaits .....!!
