INGREDIENTS
- 1/2 kg Bottle Guard /Lauki, peeled and grated
- 1 Cup Bengal gram flour/Besan
- 2 Medium Onions, chopped finely
- 2 Medium Tomatoes, chopped finely
- 1 Tbspn Ginger Garlic Paste
- 1 Tspn Coriander powder (Dhaniya) - 1 teaspoon
- 1 Tspn Cumin Seeds
Grated Lauki - 1 Tspn Turmeric Powder
- 1 Tspn Chilli Powder or as per taste
- 1 Tspn Garam Masala
- Oil for frying
- Salt to taste
- Wash and peel the lauki. Grate it and pressure cook it for one whistle.
- Once the cooked lauki cools, squeeze the lauki so as to remove water. Keep the lauki water aside.
- Mix the lauki with the besan, garam masala, salt , turmeric and chilli powder. Add a little water (if necessary) to give the mixture a dough like consistency.
- Pinch out small 1" diameter portions of the loose dough and make small balls .
- Deep fry the balls in medium heat, till they turn golden brown. Keep aside.
- In another pan, heat oil and add cumin seeds. Once they crackle, add onions and saute till golden brown.
- Add the ginger garlic paste and saute till raw smell goes away. Then add the tomatoes ,salt and the rest of the spices. Saute till oil starts oozing.
- Add a cup of water and let the gravy boil till it becomes thick or of the desired consistency.
- Then add the fried koftas. Simmer the gravy for another couple of minutes, after which finger licking lauki kofta's will be ready to relish !!
